I got this recipe from a wonderful woman at work named Carol. She took the WW recipe for cupcakes that were 1 point and added a little twist (see below). They were so good, she made a copy of the recipe for everyone at work. Two days later, we are still talking about them!
Since today was "my doctor's" birthday, I decided to make some and take them to work tomorrow. My house smells heavenly! And I can't believe they are so good for you! I mean low in points. :)
Here is the recipe:
1. 1 box of any flavor cake mix
2. 1 egg white
3. 8 oz of diet soda (diet coke or coke zero for chocolate and diet sprite for yellow/lemon cake)-I used Coke Zero.
Mix together all ingredients and cook on 350 degrees for 19-24 minutes.
**Here's the twist. If you don't mind 2 points, place a miniature Reese's peanut butter cup in the middle before baking. Soooo yummy!***

A busy, but fun day!
Today was a busy day. I spent the late morning and early afternoon at Piedmont Fayette Hospital with other nurses, NP's and doctors from our practice for the Healthy Heart Fair. We had a good turnout and hopefully provided some lifesaving, or at least life-improving, information for people.
Tonight was the first Mass and celebration for Deacon King's ordination. He is such an awesome man! I am so glad he is part of my church family. We are all blessed by his presence at St Matthews'. I have to say I really think I have the best church family in the world. Here are some pictures from the Heart Fair (I wish I had taken more pics) and tonight's celebration.

Washington DC
I spent last weekend in DC visiting one of my favorite people. Jennie and I have been friends for about 20 years. She was my first friend when I moved to GA. We have had some really good memories in PTC. Despite all of our distances over the years, we have always remained close. She is an amazing person and I am so very proud of her! I always love to visit her, but this weekend was all about Ella Elizabeth's (my namesake) 2nd birthday party. Here are some pictures from this weekend. She is a hoot! (FYI: The pictures are out of order, but you'll get the gist of it.)

"I want to thank you all for this amazing award. I have been competing in the Hampton Bowl Bowl for 10 years, but this is by far my most memorable year. It is a huge honor to be standing here before family to accept this incredible award. The Hampton Bowl Bowl is a truly special award that is given only to the best picker of college bowl games. I am flattered to be among those few and proud. I would like to first thank my parents, without them I would not be a Hampton and thus be unable to compete in the HBB. I would also like to thank my brother Rich for always being supportive of my bowl picks and my sister-in-law Leslie for not picking bowl games well thus giving me the chance to win this year. And to anyone else who has been there for me through this journey. You have all been instrumental in my HBB success! Again thank you all and I love you!" *(cry here)*
BTW- The acceptance speech was enjoyed by all. Below is a copy. I wish I had a video of it because the only child that paid any attention was Sam. He just sat there like he was enjoying a book being read during circle time in school! (And I think he clapped at the end too! :))

Inauguration Day
Today we have a new President! I know not everyone is excited about this event and is worrying what will happen now. I personally was pretty indifferent to the whole voting process and the candidates (don't misunderstand, I DID vote). I thought it was WAY overplayed and analyzed. But I have to say, I got goosebumps watching the little bit of the ceremonies I saw today. It is truly a very special day no matter who you supported in the past and a great day to be celebrate being an American. How exciting it must have been for all of the people in DC today and how special for President Obama to feel all of that love and support.
I wish President Obama the best during the next 4 years!

A New Kind of "Resolution"
I hate resolutions. I haven’t made a New Year’s resolution in years. I used to say “Oh, this year I’ll get down to a size (fill in the blank)” or “This year is the year I eat healthier, become a vegetarian, exercise more, etc” (the list could go on forever). But I can never seem to follow through. So I gave up even making a resolution, that way I wouldn’t be disappointed when I quit in February (if I even made it that long).
This year I decided that instead of making the same kind of resolution as everyone else, I would try something different. I want to get to know people better, family and friends, and I want people to know me better. I have made a list of things, facts, habits and shortcomings, etc. about me. (I saw this on Facebook, so don’t think I came up with this idea on my own). It made me reflect on myself; where I have been, where I am at, and where I want to be in the future. So here are 16 things you may already know about me and some you may not.
1. I don’t like for my food to touch. I think that the plates with separated sections are genius! I guess it’s just one of my OCD things.
2. I have a long running, passionate affair with sweet tea! It’s my weakness! And it’s a part of my everyday life.
3. I was an exchange student in Germany for 1 ½ months between my junior and senior years in high school. By far one of the best experiences of my life! The country is beautiful, the people were great and the beer wasn’t bad either! Wait, did I just say that? ;)
4. I was an ice skater as a child. I even competed and won a few times! I think I liked it so much because of the cool, glittery outfits.
5. I have an irrational fear of bridges over water. I probably won’t ever go to The Keys. I think it just goes along with a general fear of drowning. I blame those dumb drown-proofing classes in Florida. Thanks mom and dad.
6. I was a candy taste tester for the Willy Wonka Factory as a child in Chicago. By far the BEST job ever!!! I got to taste the new candies and then give them a report on what I liked and didn’t like. “Payment” was a big bag of candy!
7. I have a namesake. My best friend Jennie’s little girl is named after me, Ella Elizabeth. She is smart, funny and beautiful. Guess she got more than her name from me, huh?
8. My favorite movie is called “Back to the Beach”. I think it came out in the late 80’s. You probably haven’t heard of it. It’s a cheesy movie that stars Annette Funicello, Frankie Avalon and PeeWee Herman. Oh, yeah!
9. I hate vacuuming, unloading the dishwasher and folding laundry…the worst chores ever!
10. I have owned my own house since I was 24. Absolutely the best and the scariest decision of my life.
11. My favorite ice cream flavor is coffee, but I don’t like to drink coffee at all. But then again I would probably like spinach ice cream if there was such a thing. I am a Machan after all!
12. I cannot drive a stick shift. I’ve tried, but failed numerous times. I think in an emergency I could do it, but thank goodness I’m a nurse and know CPR… just in case!
13. My favorite memory as a child is playing in the attic crawl space that was off my brother’s closet when we lived in Naperville, Ill. I got to “decorate” it any way I wanted, meaning color it with crayons. But still, it was a pretty cool hangout.
14. I set my alarm clock 17 minutes early so I can hit snooze a few times, but still get up on time. OCD? YES! But I’m slowly breaking the habit.
15. I was scared of dogs when I was little. More specifically a little doxon puppy. Crazy, I know! But it was yippy, hyper and chased me around the house! Very scary when you’re 4 or 5 years old. I'm glad I've outgrown that!
16. I think I have the best family and friends ever! My mom and dad are my best friends. I never went through the phase where I didn’t like or get along with my brother. We have always been friends. My sister-in-law is more like the sister I never had. My 2 nephews and my niece are the loves of my life. My extended family is amazing and so much fun to spend time with. My friends are fun, sincere and so special to me. Lastly, my church family is like my second family. I know they will always support and love me just as I am.
